Lesson Plan: E.Coli: Thinking Proactively, Not Reactively

Four children died and nearly 750 patrons became ill after dining at Jack in the Box restaurants in 1992 and 1993. Initially it was thought that undercooked hamburgers were the culprit. Further investigation revealed that the deaths and illnesses were the result of an outbreak of a harmful strain of E. coli, a bacteria found in the intestines of humans and animals. Significant changes were made to food safety practices and government oversight, but outbreaks of harmful pathogens persist in the food supply today.
